Rocket – The Herb is native to Southern Europe and Asia. A very popular herb in Italy and has become the most fashionable herb in Europe.
Rocket can be used in salads and pairs well with ham, especially on a sandwich. A great ravioli filling and it makes a great herb butter for seafood.
Rocket combines well with basil, coriander, dill, mint and parsley and has a distinct peppery taste. It can be stored in the fridge in a plastic bag but do not use old rocket. It is preferable to grow your own and they thrive in partial shade. Wild rocket and Turkish rocket are the most common varieties and well worth using in your cooking.
Rocket Pesto Recipe
Great to serve on pasta, fish and vegetables and also with Venison Carpaccio
4 Handfulls rocket leaves, 1 clove crushed garlic, 30g Walnuts, 30g Parmesan or Pecorino, 6 tbsp Extra virgin olive oil
Blend all except olive oil in food processor. Add oil slowly while blending to achieve desired consistency.
